Yukon Gold potatoes (3 pounds)
Chicken broth (32 ounces)
Garlic (6 cloves slightly crushed)
Salt (to taste)
Olive oil (1/4 cup)
Prep. Wash and cube potatoes (no need to peel them). Place potatoes in a pot with the broth and crushed garlic cloves.
Cook. Boil potatoes, broth, and garlic until potatoes are tender and can be pierced with a fork. Drain broth and return potatoes and garlic to the pot. Add olive oil and mash with potatoes and garlic. Serve immediately.
